Ingredients For Okpehe Rice

  • 3 cups Rice (preferably Ofada rice)
  • 1/4 cup Palm oil
  • Okpehe, Ogiri/Dawadawa or Iru (optional)
  • Medium-sized Smoked fish
  • Ground Crayfish (to taste)
  • Medium-sized Onion (to taste)
  • Freshly ground pepper (3 Scotch bonnet, 6 Chili, 2 Tatashey)
  • Seasoning cubes
  • Salt to taste
  • A handful of chopped Curry leaves (optional)

Okpehe rice recipe

  1. Prepare the Rice: Rinse and parboil the ofada rice thoroughly to remove excess starch.
  2. Spice Preparation: Blend pepper (tatashe, tarugu, and miango) to your desired spice level. Wash, slice, and set aside the onion.
  3. Fish Preparation: Gently wash the smoked fish in warm, salty water. Remove bones and gut, then rinse and set aside.
  4. Create the Base: Heat palm oil without bleaching it. Sauté chopped onions for about 2 minutes, then add the pepper puree and stir-fry.
  5. Combine Ingredients: Pound crayfish with okpehe (if using) and washed smoked fish. Add water, salt, and seasoning cubes, then cook for 7 minutes. Incorporate the drained parboiled rice and cook until half done.
  6. Finish Cooking: Add sliced leafy vegetables (optional) and cook until the liquid is absorbed, creating a flavorful Okpehe rice.
